Homemade Blueberry Muffins

As you may know blueberries were on sale last week for $.99 a pint!  I had some big plans for these babies and so far they have not disappointed!  Here is another great recipe.  The batter is sweet and yummy.

3 Tablespoons butter
1 Cup Sugar
1 Egg
2 Cups Flour
2 Teaspoons Baking Powder
1 Cup Milk
1 1/2 Cups Blueberries

Cream butter and sugar.  Add egg and beat.  Add alternately dry ingredients with milk.  Mix well.  Stir in blueberries.  Fills about 16 greased muffin tins.  Sprinkle sugar on top.  Bake at 375 degrees for 25-30 minutes.  Enjoy!

FYI-Probably one of the pickiest eaters around (Mason) is chowin down on these right now!  

* Also I'm thinking that this recipe will be a great food storage one as well.  Just need to get some dehydrated blueberries.  Although I'm sure any fruit would work just fine.
